Double Gloucester is a firm, mellow English cow's-milk cheese — deep orange-gold, dense and smooth-breaking, with a buttery, faintly nutty, gently savoury flavour far rounder and less sharp than cheddar. Made in Gloucestershire for centuries, it is most famous beyond the cheeseboard as the wheel chased down Cooper's Hill in the annual cheese-rolling race.
