Doogh is the savoury yogurt drink of Iran and the wider Persian cultural world: plain yogurt thinned with cold water, seasoned with salt and dried mint, and served thoroughly chilled. Tangy, cooling and faintly herbal rather than sweet, it is the everyday companion to kababs and rich rice dishes, and in its bottled form is often lightly carbonated for a refreshing fizz. It belongs to the same broad family as Turkish ayran and Armenian tan, but the Iranian version is distinguished by its mint and by the carbonated style sold across the country. Made from cultured dairy, it is naturally probiotic and unmistakably not sweet.
