Division Bell
The Division Bell is a modern-classic mezcal sour — a Last Word riff built on smoky mezcal, bittersweet Aperol, maraschino liqueur and fresh lime, shaken hard and served up in a coupe with a grapefruit twist. Created by Phil Ward at Mayahuel in New York, it is pale coral, bittersweet and gently smoky, an aperitivo-leaning twist on the gin-and-Chartreuse original.

Bitter-orange
Pale coral in the coupe, the Division Bell smells first of mezcal smoke and expressed grapefruit oil, then of the bittersweet bitter-orange and rhubarb of Aperol and the nutty, cherry-stone sweetness of maraschino, with fresh lime cutting through. On the palate it is bracingly sour and gently smoky — bright lime and campfire agave up front, a rounding bittersweet orange in the middle, and a dry, faintly nutty, bitter finish at around 22 percent alcohol in the glass. It drinks drier and more aperitivo-like than its coral colour suggests.
