Demerara sugar
Sweetener
Top 10 pairings
Demerara is a partially refined cane sugar with large, hard, pale-amber crystals that stay dry and free-flowing and give an unmistakable crunch. Made by allowing raw cane sugar to crystallise coarsely and retaining a thin coating of its own molasses, it has a light golden colour and a mild caramel-and-toffee flavour far gentler than that of dark, damp muscovado.
