Date sugar is a granular whole-fruit sweetener made simply by drying dates and grinding them to a coarse powder — nothing is added and nothing is refined out. Unlike white or coconut sugar it is not crystallised from a boiled-down juice or sap; it is the whole dried fruit itself, flesh, sugars, fibre and all, milled into loose reddish-brown granules with a deep caramel-toffee, dried-fruit flavour and a warm raisin-like sweetness. Because it is essentially powdered dates, it keeps the fruit's fibre and minerals and does not dissolve like ordinary sugar.
