The Deglet Noor is the semi-dry date the world trades most — a slim, oblong fruit of pale, luminous amber so translucent that, held to the light, it seems almost to glow, which is exactly what its name (date of light) describes. Where the soft Medjool is plush, dark and fudgy, the Deglet Noor is firm and chewy, chipping away in dry flakes, with a delicate, mildly sweet, faintly nutty flavour that lets it carry a meal rather than dominate it. Grown above all in the oases of Algeria and Tunisia and in California's Coachella Valley, it is the standard cooking and snacking date of Western shops.
These cues are Date's, and hold across its varieties; where this one differs, its own page says so.
