The dab (Limanda limanda) is a small, abundant right-eyed flatfish of the north-east Atlantic and North Sea, with a rough sandy-brown upper side and sweet, lean white flesh. Cheap, plentiful and quick to cook, it is a humble everyday eating fish — pan-fried, grilled or fried whole.
