Cusk (Brosme brosme) is a deep-water North Atlantic fish of the cod order, the sole member of its genus, with firm, lean, white flesh similar to cod and a single long dorsal fin running almost the length of its back. Known as tusk in Britain and torsk in Scandinavia, it is eaten fresh, salted and dried, and smoked.
