Crème de Noyaux

Crème de noyaux is a sweet, almond-flavoured crème liqueur, usually a rosy pink or red, whose marzipan character comes not from almonds but from the crushed kernels of stone-fruit pits — apricot, peach and cherry stones — that yield the same bitter-almond compound, benzaldehyde. Its name is French for "cream of kernels," and it is best remembered as the blushing base of the Pink Squirrel.

Sweet and syrupy, crème de noyaux leads with a pronounced bitter-almond and marzipan aroma — the benzaldehyde note shared with cherry and apricot kernels — layered over vanilla, a touch of caramel and a soft rosy fruitiness. The texture is viscous and rounded, the alcohol gentle for a liqueur at around a quarter ABV, and the finish lingers sweet and almondy with a faint kernel-bitter edge. In the glass it is often a blushing pink, its flavour brighter and more cherry-tinged than the deeper caramel of amaretto.
