Crème de cassis is a sweet, dark-red to deep-purple blackcurrant liqueur strongly associated with Burgundy and the city of Dijon in eastern France. Made by steeping blackcurrants (cassis) in spirit and sweetening heavily with sugar, it is bottled at a modest strength of roughly 15 to 20 percent alcohol by volume and is best known as the splash that turns a glass of white wine into a Kir, or sparkling wine into a Kir Royale.
