Intensely sweet and syrupy, crème de abricot leads with the aroma of ripe, sun-warmed apricot — soft, jammy and faintly floral, with a honeyed, nectar-like ripeness. Beneath the fruit sits a heavy sugar syrup and, in kernel-influenced bottlings, a marzipan-like benzaldehyde note carried from the crushed apricot stone. There is little bitterness and only gentle acidity; the alcohol is mild for a liqueur at around 15 to 22 percent ABV, so the fruit and sugar dominate. The texture is thick and rounded from the high sugar, and the finish lingers sweet, apricot-jammy and slightly almond-scented — which is why it works so well loosening into sparkling wine and sours.
