Cream soda

Cream soda is a sweet, carbonated soft drink flavoured chiefly with vanilla, giving it the rounded, confectionery-like sweetness from which it takes its name. It is non-alcoholic and, despite the word "cream", usually contains no dairy at all — the creamy impression comes entirely from vanilla and sugar over fizzy water. The colour varies sharply by country: clear or pale gold in much of the United States and Britain, bright pink or red in Canada and Australia, and brown in some Australian and older American versions. Soft, smooth and dessert-like, it sits alongside root beer and sarsaparilla in the family of old-fashioned American sodas.

Cream soda reads first and foremost as sweet vanilla — a warm, custardy, almost confectionery note — carried on a soft, creamy-seeming body of sugar and fizz, with a faint caramel or butterscotch edge and just enough food acid and carbonation to keep the sweetness from cloying. There is no real dairy fat behind the creaminess; the impression is built entirely from vanilla and sugar over carbonated water.
