Half-and-half is a light dairy blend — equal parts whole milk and light cream, standardised to roughly 10.5–18% milkfat — that sits squarely between the two. Richer and rounder than milk but far leaner than pouring cream, it is the classic American "coffee cream": a splash that lightens and softens coffee, and a gentle enricher stirred into soups, sauces, scrambled eggs and custards. It is too lean to whip and will curdle if boiled.
These cues are Cream's, and hold across its varieties; where this one differs, its own page says so.
