Cortado

A cortado is a small coffee drink made by cutting a shot of espresso with a roughly equal amount of warm, lightly textured steamed milk and little or no foam. Spanish in origin, its name comes from cortar, to cut, meaning the milk is added only to take the sharp edge off the espresso rather than to drown it. The result is a short, balanced cup, typically about ninety to one hundred and twenty millilitres, that keeps a strong coffee character while softening the bitterness; it is milkier than a macchiato but far less milky than a latte, and is usually served in a small glass.

A cortado reads first as strong roasted coffee, the espresso still clearly in front, but its bitterness and bright acidity are rounded by warm steamed milk that adds a creamy body, a faint lactose sweetness and a soft milky aroma over the caramel and cocoa notes of the shot. Balanced and short, it tastes fuller and gentler than a plain espresso yet far more coffee-forward than a latte, with only a thin skin of microfoam rather than a foamy cap.
