Corn flour is dried maize (Zea mays) milled to a fine, soft flour that still contains the whole kernel — endosperm, germ and bran. Powdery and pale gold, it is the finest grind in the cornmeal family, used in cornbread, muffins, batters, dredges and gluten-free blends.
