Corn 'n' Oil
The Corn 'n' Oil is the classic rum drink of Barbados — dark, aged or blackstrap rum poured over crushed ice with falernum, a squeeze of fresh lime and a couple of dashes of Angostura bitters. Built rather than shaken and served in a rocks glass, it is a deep, glossy, almost black cocktail whose curious name comes straight from the way it looks in the glass.

Deep, dark and glossy, the Corn 'n' Oil smells of molasses-heavy aged rum layered with the clove, ginger, almond and lime of falernum and a bittersweet whiff of Angostura spice. On the palate it is rich and spirit-forward — sweet, syrupy rum and spiced falernum set against a bright squeeze of fresh lime and the bittersweet baking-spice edge of the bitters — with a warm, molasses-and-clove body, a whisper of woody rum barrel, and a long, spiced, faintly bitter finish at around 20 to 22 percent alcohol in the glass.
