Micro cilantro is the microgreen of coriander (Coriandrum sativum) — coriander seedlings cut at roughly 1–3 weeks old, when the plant is only a few centimetres tall with its seed leaves and the first one or two true leaves. Tiny but intensely flavoured, it delivers a concentrated burst of the mature herb's bright, citrusy, "soapy-to-some" cilantro character in a single delicate sprig.
