Cold brew coffee

Cold brew is coffee made by steeping coarsely ground beans in cold or room-temperature water for many hours, usually about twelve to twenty-four, then filtering out the grounds. Because it never meets heat, it extracts slowly and selectively, yielding a smooth, full-bodied, low-acidity coffee that tastes naturally sweeter and less bitter than a hot brew. It is served cold over ice, often diluted from a stronger concentrate, and should not be confused with iced coffee, which is brewed hot and then chilled.

Diluted black cold brew reads as smooth, rounded coffee — clearly roasted and chocolatey with caramel and malt — but noticeably softer than a hot cup: low in acidity, gently bitter, with a clean, naturally sweet finish and a medium body, served cold and clear over ice without crema or foam.
