Colby is a semi-hard American cow's-milk cheese — golden-orange, springy and mild, with an open, slightly elastic body that is moister and softer than the cheddar it resembles. Named for the Wisconsin town where it was created, it is a gentle, milky, faintly sweet cheese and the foundation of the marbled Colby-Jack found across the United States.
