Cola

Cola is a sweet, dark, carbonated soft drink coloured with caramel and flavoured with an aromatic blend of citrus oils, vanilla, cinnamon and other spices, originally built around the caffeine-bearing kola nut that gives the style its name. Born in the pharmacies of the American South in the 1880s, it became the defining soft drink of the twentieth century and, in the hands of Coca-Cola and Pepsi, the best-selling flavour of soda in the world. It is non-alcoholic, fizzy, frankly sweet and mildly caffeinated, and is drunk ice-cold the world over.

A cold cola reads first as sweet burnt-sugar caramel laced with warm cinnamon and spice and a bright lift of orange and lemon oil, with vanilla rounding the body; the taste is frankly sweet with a tangy acidic bite and a faint bitter edge, all carried on sharp carbonation that scrubs the palate clean.
