The cod cheek is the small, round, gelatinous morsel of muscle set into each side of the fish's head, behind the eye — two per fish and scarce. Firmer and sweeter than the flaky fillet and laced with collagen, it is a delicacy in its own right, sold separately at a premium. In the Basque kitchen the prized head morsels are the kokotxas de bacalao, most famously emulsified into a silky pil-pil of garlic and olive oil.
