Chocolate liquor — also called cocoa mass or cocoa liquor — is the thick, dark paste made by grinding roasted cacao nibs. It contains no alcohol and no added sugar: it is simply the whole roasted seed of the cacao tree (Theobroma cacao) minus its shell, liquefied by its own fat. Deeply bitter and intensely aromatic, it is the single base ingredient from which chocolate, cocoa butter and cocoa powder are all made.
