The Clover Club is a pre-Prohibition gin sour, built from gin, fresh lemon juice, raspberry syrup and egg white, dry-shaken to a froth and then shaken again with ice and served straight up. It is a pretty, pale rose-pink drink crowned with a fine white foam cap, tart and lightly fruity, with the botanical edge of gin running underneath the sweet-sour raspberry. Named after a Philadelphia men's club of the 1880s, it was a fashionable bar order in the years before American Prohibition, fell out of favour for decades, and has since returned as a celebrated classic of the modern cocktail revival.
