Clairin

Clairin is Haiti's traditional raw rum, distilled from the juice or syrup of fresh-pressed sugarcane rather than molasses, and bottled unaged and cask-strength with a wild, funky, grassy and intensely aromatic character. Made in hundreds of small rural distilleries from local, often organic and wild-yeast-fermented cane, it is one of the most terroir-driven spirits in the world, and it has moved from a village drink to a category prized by bartenders and rum connoisseurs abroad.

Wild, raw and intensely aromatic, clairin leads with crushed fresh sugarcane and cut grass over green-olive brine, over-ripe banana and tropical fruit, all lifted by a sharp vegetal, earthy funk that marks its wild ferment and cane-juice origin. Bottled unaged at 45 to over 50 percent, it is clear, pungent and high in esters, with a warming alcohol heat and a mineral, damp-earth edge that shifts from one village and still to the next, so no two clairins smell quite alike. The finish is dry, grassy and long, brinier and funkier than cachaça or rhum agricole, closer to a Jamaican high-ester rum or a fine mezcal than to a smooth aged sipping rum.
