Chuflay

The Chuflay is Bolivia's national highball — singani, the country's aromatic grape brandy, lengthened with ginger ale (or lemon-lime soda) and brightened with fresh lime, built over ice in a tall glass and finished with a lemon twist. Pale, fizzy and easy-drinking at around 10 percent alcohol, it is the everyday way Bolivians take their national spirit, the singani equivalent of a gin-and-tonic.

Pale and lightly effervescent, the Chuflay leads with the unmistakable perfume of singani — floral muscat grape and orange blossom — lifted by bright lime and, when ginger ale is used, a warm gingery spice. On the palate it is a light, refreshing highball: gently sweet from the soda, tart with fresh lime, with a soft fizz and a clean, grape-scented finish at around 10 percent alcohol in the glass. Made with lemon-lime soda it turns cleaner and more citrus-forward; made with ginger ale it gains a peppery ginger warmth, but either way the aromatic singani stays front and centre.
