Chorizo is a boldly seasoned pork sausage stained deep brick-red by paprika and laced with garlic. Spanish chorizo is cured and air-dried until firm, sliced and eaten like salami or chopped into stews where it bleeds orange-red fat; Mexican chorizo is a fresh, soft sausage, spiced with vinegar and dried chillies and squeezed from its casing to be crumbled and fried. Rich, smoky, spicy and fatty, it is the flagship sausage of Spain, Portugal, Mexico and much of Latin America.
