Chitterlings — often spelled and pronounced "chitlins" — are the cleaned small intestines of a pig, a humble offal that turns soft, chewy and richly savoury after long, slow cooking. A cornerstone of African American soul food, the same pork casing is the base of French andouille and andouillette and of Korean gopchang, a strong-flavoured, strong-smelling cut that rewards patient cleaning and hours in the pot.
