Chimichurri is the uncooked green herb sauce of Argentina and Uruguay, made by chopping fresh flat-leaf parsley and garlic with dried oregano, then loosening them with red wine vinegar, olive oil, salt and chilli flakes. Bright, sharp, garlicky and grassy, it is the near-mandatory table sauce for grilled beef and the asado, brushed on meat and served alongside as a dip.
