The rocoto is a thick-walled, apple-shaped Andean chile of the species Capsicum pubescens, bright red (or sometimes yellow or orange) and deceptively fierce — its juicy, almost fruit-like flesh hides a sharp, fast heat of roughly 30,000-100,000 Scoville units. Unique among cultivated chillies, it carries jet-black seeds and downy, hairy leaves, and it is the heart of Peru's signature dish rocoto relleno.
