The Piquillo is a small, sweet, deep-red pepper from Lodosa in Navarre, in northern Spain, named for its little triangular "beak" shape (pico means beak). Picked fully ripe, then fire-roasted over wood, hand-peeled and packed in its own juices, it has almost no heat and a rich, smoky-sweet flavour that has made it one of Spain's most prized preserved vegetables.
