The pepperoncini is a small, pale yellow-green, thin-walled sweet chilli of the Italian and Greek table (in Italy the friggitello, in Greece the tourshi or golden Greek pepper), grown for pickling rather than heat. Barely warm at a few hundred Scoville Heat Units, its wrinkled, tapering pods are almost always brined whole and sold in jars, where they turn tangy and briny — the crunchy garnish of Greek salads, antipasti platters, submarine sandwiches and giardiniera.
