The mulato is the dried form of a fully ripened poblano — a broad, flat, wrinkled pod so dark it is nearly chocolate-brown, sweeter and softer than its cousin the ancho, with deep notes of chocolate, dried cherry and liquorice and only gentle heat (about 1,000–2,000 SHU). With the ancho and pasilla it is one of the three foundational dried chillies of classic mole poblano.
These cues are Chilli's, and hold across its varieties; where this one differs, its own page says so.
