The Kashmiri chilli is a mild, deep-red Indian chilli prized above all for the intense crimson colour it lends a dish rather than for heat (roughly 1,000–2,000 SHU). Long, slender and thin-skinned, it is the foundational red chilli of North Indian and Mughlai cooking — the source of the glowing red in tandoori marinades, rogan josh and countless curries.
These cues are Chilli's, and hold across its varieties; where this one differs, its own page says so.
