The Fresno chile is a short, conical Capsicum annuum cultivar, a thick-walled medium-hot pepper that ripens from waxy green through orange to a glossy fire-engine red. Crisp, bright and fruity, it is prized fresh and pickled, and is often mistaken for the jalapeno it superficially resembles.
