The chilaca is a long, slender, curving fresh chilli from central Mexico — glossy dark green with a faintly iridescent, near-purple-black sheen, mild heat (about 1,000–2,500 SHU) and a savoury, herbal-grassy flavour. Left to ripen and dried it becomes the pasilla, but fresh it is a distinct pod prized for rajas and roasted salsas.
