Cayenne is the long, thin, fiery-red workhorse chilli best known not as a fresh pod but as the pungent crimson powder ground from its dried fruit. Rating roughly 30,000–50,000 Scoville Heat Units, it is several times hotter than a jalapeño and is the standard "hot" in spice racks, hot sauces and Cajun and Creole cooking.
