The Anaheim is a long, slender, mild green chile of the New Mexico type, named for the California town where it was first grown commercially around 1900. Six to ten inches long and gently curved, it is grassy and only gently warm, and it is the everyday roasting pepper of the American Southwest — blistered and peeled for chiles rellenos, chopped into green chile sauce and stews, or dried red for ristras and ground into chile powder.
