The aji amarillo is Peru's defining chile — a glossy, golden-orange, tapering pod about 10-15 cm long with a strikingly fruity aroma of berry, mango and passion fruit riding on a moderate, building heat of roughly 30,000-50,000 Scoville units. Despite the name amarillo (yellow in Spanish), the ripe fruit is a deep orange, and it is the single most important chile in Peruvian cooking.
