Chilcano
The Chilcano is the classic Peruvian pisco highball — pisco lengthened with fresh lime, ginger ale and a few dashes of Angostura bitters, built straight over ice in a tall glass. Pale, effervescent and gently spicy, it is the everyday long drink of Peru, lighter and more refreshing than the country's more famous Pisco Sour and a fixture of casual gatherings and warm afternoons.

Pale and lightly sparkling, the Chilcano smells of fresh lime and the floral grape fragrance of pisco lifted by the sweet, peppery snap of ginger ale and a whiff of aromatic Angostura spice. On the palate it is bright and refreshing — a tart citrus edge and clean grape-brandy spirit set against the sweet ginger warmth and fizz, with the bitters adding a bittersweet, faintly clove-like depth. It finishes long, dry and gently spicy at around 12 percent alcohol in the glass, a thirst-quenching highball built for easy drinking.
