Chilacayote (fig-leaf gourd, also cidra, alcayota or lacayote) is a hard-shelled Cucurbita ficifolia squash with a dark-green, white-mottled rind that looks like a small watermelon, white to pale stringy flesh and, unusually for a squash, black seeds. Grown across highland Latin America, it is prized less as a vegetable than as the raw material for sweets — the candied "cabello de ángel" (angel-hair) filling and Mexican dulce de chilacayote.
