Chickpea flour — known as besan or gram flour across South Asia — is dried chickpeas (Cicer arietinum) milled to a fine, pale-yellow powder. Naturally gluten-free, nutty and high in protein, it is the body behind socca, pakora, the Burmese tofu, panisse and countless batters, breads and binders.
