The chicken drumstick is the lower segment of the bird's leg — the meaty section between the knee and the foot, built around a single bone (the tibia). It is classic "dark meat": deeper in colour, richer and more forgiving than the breast, with a small handle of bone that makes it the quintessential finger food.
