Chicha morada is a deep purple, non-alcoholic Peruvian drink made by boiling maíz morado — Peru's anthocyanin-rich purple corn — with fruit and warm spice, then straining, sweetening and sharpening the liquid with lime. Despite its name it is not fermented and contains no alcohol, which sets it apart from the fermented maize beer chicha de jora. Fruity, faintly spiced and tart-sweet, it is one of Peru's most beloved everyday refreshments, served ice-cold from market stalls, homes and restaurants across the country. Its arresting violet colour comes entirely from the pigment of the corn, not from any added dye.
