Micro chervil is the seedling stage of chervil (Anthriscus cerefolium), harvested at about one to three weeks old once the first feathery true leaves appear — a tender, pale-green microgreen used raw as a finishing garnish. It delivers a concentrated, vivid version of chervil's signature flavour: a clean parsley-like green over a soft sweet-anise lift, more intense than the mature herb yet just as delicate on the plate. Grown indoors on trays year-round, it is a chef's microgreen rather than a field crop, snipped over eggs, fish, raw bars and plated dishes at the last moment.
These cues are Chervil's, and hold across its varieties; where this one differs, its own page says so.
