Cheddar is a firm, aged cow's-milk cheese — pale ivory to deep orange, dense and smooth-breaking, ranging from mild and buttery young to sharp, crumbly and almost crystalline when matured for years. Born in the English village of Cheddar, it is now the most-made hard cheese on Earth, the default "cheese" of much of the English-speaking world.
