Chartreuse

Chartreuse is a French herbal liqueur made by the Carthusian monks of the Grande Chartreuse monastery from a secret recipe blending some 130 plants, herbs and flowers macerated and distilled in spirit, then sweetened and aged in oak. It comes chiefly in two styles — the intense, vivid Green Chartreuse at 55 percent alcohol and the milder, honeyed Yellow Chartreuse at 40 percent — the green giving its name to the colour chartreuse.

Sweet and syrupy but bracingly strong, Green Chartreuse leads with a dense, pungent rush of herbs and green vegetal notes — mint, anise, thyme and pine — over warm baking spice (clove, cinnamon), a touch of floral and a long, bitter, resinous finish with a high alcoholic warmth; Yellow Chartreuse is milder and sweeter, with honey, saffron and softer herbal florals.
