Champurrado is a thick, hot Mexican drink — a chocolate atole — built on corn masa and enriched with Mexican chocolate, unrefined cane sugar and warm spice. Where most chocolate drinks are thin, champurrado is deliberately substantial: the masa thickens it to a glossy, almost porridge-like body that coats the cup and is meant to be spooned or sipped slowly. Traditionally whisked to a froth with a wooden molinillo, it is a non-alcoholic comfort drink of cold mornings, street stalls and the December and Day-of-the-Dead seasons, classically served with tamales or a churro.
