Chaas is the everyday savoury buttermilk of the Indian subcontinent — yogurt (dahi) whisked with cold water and salt into a thin, pourable, faintly sour drink, usually seasoned with roasted cumin, ginger, green chilli and fresh curry or coriander leaves. Lighter and more watery than its sweet, creamy cousin lassi, it is drunk cold to cool the body in hot weather and is valued as a digestive served after or alongside a meal. It is dairy-based, lightly tangy, gently spiced and never sweet.
