Celery seed is the tiny, ribbed brown "seed" — botanically the dried fruit — of Apium graveolens, the same species as stalk celery but most often the wild, strong-scented form known as smallage. Barely 1–2 mm across, it carries a concentrated, bitter-grassy celery punch far more intense than the stalk, and is the backbone of celery salt, a classic pickling spice, and a quiet savoury note in coleslaw, brines, dry rubs and the seasoning of a Bloody Mary or a Chicago-style hot dog.
