Micro celery is the microgreen stage of the common celery plant (Apium graveolens) — fine seedlings harvested at just a few centimetres tall, when the first divided true leaf has emerged above the pair of narrow seed leaves. For its delicate size it carries a startlingly pure, concentrated celery flavour — green, peppery and distinctly aromatic — and it is eaten raw as an elegant garnish, salad accent and plating green.
